The Making of Yellow Rose Jerky

My jerky starts its life off as a solid piece of USDA Choice (or better) cut of beef eye of round. When making beef jerky it is especially important to use a cut of meat that is as lean as possible, that way there is little or no fat in the beef jerky.

Because the eye of round cut has a thin layer of fat surrounding the meat, it must be trimmed before the jerky slices are cut. This is done by hand using the sharpest knife.

After the fat has been trimmed off the cut of meat, it is ready for the slicing. Yellow Rose Jerky is sliced using a commercial meat slicer at a thickness of 6.5mm. Using the meat slicer ensures a constant thickness from each and every piece of jerky.

After the meat has been sliced using the slicer, it still needs more work. Since the eye of round cut is wide and circular, the slicer cuts pieces too large to make beef jerky. The slices are then cut in half or in third by hand, using as much care as possible to remain consistency.

The next step is the most important part of making Yellow Rose Jerky. The secret marinade. Along with the secret ingredients, the marinade includes a special blend of spices from Texas BBQ Rub and pineapple jalapeno jelly from Texas Pepper Jelly (to add sweetness and a dash of heat). The meat is soaked in the marinade for many hours. The marinade penetrates so deeply inside the meat that the cuts of jerky actually change color.

After the meat has absorbed enough marinade, it is then dehydrated. I spent lots of time experimenting with jerky batches to find the perfect temperature and time for dehydrating. With the right combination of temperature and time, Yellow Rose Jerky has the perfect combination of being tender and moist. This is unlike most beef jerky, which is usually tough and chewy. After the jerky is ready, a layer of pepper is sprinkled over. Since the pepper is put on after the jerky has been dehydrated, if you don't like pepper all you have to do is shake the jerky or brush it off with your finger. It's that easy.

Yellow Rose Jerky is then placed in its package. The package features a zip-lock style top. This means you can munch on some jerky, seal it up, and come back later for more. The bag is also vacuum sealed to ensure freshness. Each bag contains 8 oz. of handmade, high quality, beef jerky.
